- 2 tbsp white balsamic vinegar
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1 garlic clove, minced
- Sea salt and black pepper

- 4 cups of microgreens
- 1 cup arugula
- 1 cup thinly sliced cucumber
- 4 radishes, thinly sliced
- 1 cup strawberries or sliced pear
- 1/3 cup toasted walnuts
- 2 tbsp fresh herbs (mint, dill, or parsley)
- Avocado slices

- 2 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Prepare the Salmon:

- Whisk together white balsamic, olive oil, Dijon, honey, garlic, salt, and pepper.
- Brush over salmon and let marinate for 15–20 minutes.
- Bake at 400°F for about 10–12 minutes, or pan-sear 4–5 minutes per side until flaky.
- During the last few minutes, spoon extra glaze over the salmon to create a light, glossy finish.
